Cinnamon Pumpkin Waffles

Cinnamon Pumpkin Waffles

1 c whole wheat flour
1/4 c wheat germ
1/3 c white sugar (I used raw sugar)
1 t cinnamon (I used more...love it)
1 t pumpkin pie spice
1/2 t ground nutmeg
1/2 t salt
1 T baking powder
3/4 c milk
1/2 pumpkin puree (I used close to 1 c)
2 T melted butter
2 T olive oil
1/2 c applesauce
1 egg
1 egg white

Preheat waffle iron. Combine flour, wheat germ, sugar, cinnamon, pumpkin pie spice, nutmeg, salt, and powder in a bowl. Set aside. Beat together milk, pumpkin puree, butter, oil, applesauce, egg, and egg white. Stir in flour mixture. Ladle batter into waffle iron. Cook until golden and crisp. Warm in oven at 250 degrees until ready to sit and eat.

*Do the oven step if you like your waffles more crispy since the pumpkin makes them super moist.
